I have also checked all the connections three times. Your method works wonderfully on X-Fi platinum card too... The Creative tools I have don't seem to like the 5.1 setting. and when I Turn OFF the Matrix to get a 2.1, Realteck test play all 5 speakers.

Matrix mode basically takes the left/right speaker's signal and plays it over the left/right surround and center/subwoofer. Don't know about the 'play slow' situation, I've used VLC and WMP10, never had that problem. The Matrix mode can be enabled with the hardware switch provided at the right side of the volume control of the Logitech X540 5.1. You know you don't want Matrix mode if you have all three wires hooked up.
